In addition to rationing, housewives and cooks had to deal with shortages of many foods. Recipes had to be adjusted to stretch or make substitutions for difficult-to-obtain ingredients. Other recipes were devised to make use of ingredients that were easy to get.

An interesting variation on the gingerbread theme can be made by substituting one-half cup of orange juice for the milk and one tablespoon of grated orange rind to replace the spices, however, to carry out this variation, mix the orange rind with the liquids rather than with the dry ingredients.

Only one-fourth cup of sugar is necessary to make this dessert which serves six people.
